Halloween Recipes: spooky treats and décor

 

October is here which can only mean one thing..... PUMPKIN SEASON! It's time for pumpkins and costumes. Are you ready for Halloween? If you want to organize a Halloween meal, we've got you covered! We have put together some recipes for your perfect Halloween get together to delight your guests.

Homemade chocolate decorations for Halloween cakes 

If you have a little more pastry experience, you can make the chocolate decorations for your Halloween cakes yourself. 

For this you need:  

  • Chocolate: for example Ivoire 35% Valrhona . Ideal for making little ghosts out of it.  
  • Dyes: not strictly necessary. But dyes allow you to create different colored decor and your Halloween.

For example, you can create decorations in the form of ghosts. Melt and temper the baking chocolate. Put a spoonful of it on a piece of parchment paper. Spread with a spoon or brush and form a ghost. Then wait for the chocolate to fully crystallize, then add the eyes and mouth. For example, to “draw” with a toothpick or the tip of a knife, you can use melted dark chocolate. And the ghosts can take a seat on your cake.

How about some ghosts taking a seat on your dessert? Prepare an Italian meringue or a frothy white chocolate ganache cream. All you have to do is apply this to the Halloween cake with a piping bag and the crowd of ghosts will be haunted!

Who dares taste your cupcakes decorated with bloody broken glass? 

Recipe for fake broken glass made of sugar  

  • Sugar: 200g 
  • Water: ½ glass  
  • White vinegar: 5 tablespoons 

Put the vinegar, water and sugar in a saucepan. Bring to a boil. Simmer for about 3 minutes and remove from heat just before caramelization begins. (You want the sugar to be transparent and not caramelized to make it look like glass). Stop cooking and transfer the mixture to a silicone baking mat. get hard. The sugar can be broken into pieces with a knife or rolling pin. 

You can make the blood from red berry coulis!

You don't need any coloring for this dessert because the pumpkin gives the tart its orange colour. 

New interpretation of carrot cake: recipe from the pastry chef 

The carrot cake is a great classic among autumn recipes.  

This one has been reimagined by the École Gourmet and is now even tastier. We encourage you to try this recipe 

First step: prepare the carrot cake batter. Note: the dough must be made the day before. This cake requires a little more prep time than the other two. 

To spice up this recipe and make it even more delicious, the École Valrhona pastry chefs have added: 

Homemade Candy: Trick or Treat?  

Have you ever tried making candy yourself? We offer you an easy recipe that you can prepare at home. 

You need the following ingredients:  

  • Agar-agar: 2 g 
  • Lemon juice: 1 tablespoon 
  • Pomegranate syrup (or any other syrup you like): 80 ml 

And the preparation can begin! Mix the lemon juice and syrup in a saucepan. heat everything. Then add the agar agar and mix well. Remove the pot from the heat as soon as the mixture begins to simmer. Pour the mixture into praline molds. If you don't have a mold, you can pour the mixture into a shallow container instead. Then cut cubes to the desired size. Leave for two hours. Take the candies out of the mold. They are even tastier when rolled in sugar.
