MANUFACTURING OF OUR PRODUCTS

HOW IS THE CHOCOLATE MADE?

Valrhona, the producer and creator of unique flavors, controls the entire production of its chocolate products, as well as the selection of cocoa beans for its products. These are made in Tain l'Hermitage's production workshops from fine cocoa and carefully selected ingredients.

The other ingredients (vanilla, flour ...) are selected by Valrhona for their aromatic quality under strict conditions. These ingredients are usually also used by the most important French chefs. For more information, see the related product sheets.

WHAT IS COCOA BUTTER BUTTER AND HOW IS IT USED?

Cocoa butter is the fat of the cocoa bean. It serves as a texturing agent that gives the couverture a certain flowability.

HOW IS COCOA BUTTER MADE?

The beans used are selected for their butter content. The cocoa butter is extracted from the bean in a hydraulic press: under high pressure, it is pressed between two sieves, the cocoa butter flows through the sieve and a non-greasy paste remains, the cocoa cake.

DOES VALRHONA PRODUCE A PURE COCOA BUTTER CHOCOLATE?

Yes, Valrhona is committed to producing only "pure cocoa butter" chocolate. Chocolate (for cooking at home, carrés, bars ...) is traditionally made from cocoa beans. In the production of these, only cocoa butter is used as vegetable fat.

WHAT IS DONE WITH THE SHELLS FROM THE ROASTERY (TORREFACTURE)?

These residues are used as compost in gardens and also for mulching soils.

DOES VALRHONA USE THE IONIZATION PROCESS?

No, Valrhona does not use the ionization process in the manufacture of its products. Irradiation (ionization) means exposing food to ionizing radiation (ionization process). This procedure is sometimes used to sterilize certain foods. This is not the case with Valrhona.

PRODUCT COMPOSITION

WHAT DOES THE PERCENTAGE ASSOCIATED WITH EACH CHOCOLATE MEAN?

The percentage associated with each chocolate indicates the minimum cocoa content (= total percentage of the cocoa product).

IS CHOCOLATE AN ALLERGENIC PRODUCT?

The cocoa bean is not a major allergen with a mandatory declaration in accordance with the current European regulation (cf. Regulation No. 1169/2011). However, chocolate may contain allergenic ingredients (eg, nuts. milk, soy, etc.), which in this case are indicated on each online product sheet in the "Information" category.

All allergenic ingredients are also consistently mentioned in our ingredient lists for each final product (in bold or capital letters).

DO YOUR CHOCOLATES CONTAIN ALCOHOL?

Valrhona products available here do not contain alcohol.

DO YOUR CHOCOLATES CONTAIN PEANUTS?

There is no risk of peanut contamination with Valrhona products.

DO YOUR PRODUCTS CONTAIN SUNFLOWER LECITHIN? WHY IS SUNFLOWER LECITHIN USED?

Yes, Valrhona uses sunflower lecithin as an emulsifier in the production of its chocolates. The addition of lecithin allows for better texture, melt, crispiness and release of flavors.

Lecithin is an essential binder to stabilize and fluidize chocolate, thus obtaining a homogeneous product.

DOES VALRHONA USE GMO LECITHIN?

Valrhona undertakes to exclude the use of all raw materials from GMOs in accordance with European regulations.

Therefore, the soy lecithin we use does not contain GMOs. In this regard, our suppliers commit to very precise specifications; the absence of stocks of GMO soy DNA is validated by an accredited analysis (PCR method) for each batch produced.

WHY IS MILK POWDER USED TO MAKE MILK CHOCOLATE?

No water should be added to the chocolate, as we want to get a dry product. However, milk contains water, while milk powder is dry. This is the reason why milk powder is used.

WHAT IS GRUÉ?

They are pieces of roasted cocoa beans.

USE OF OUR PRODUCTS

WHAT ARE THE OPTIMAL CONDITIONS FOR THE STORAGE OF VALRHONA PRODUCTS?

The optimal conditions for storing chocolate are in a cool, dry place, protected from light and odours. The ideal temperature is constantly between 16 ° C and 18 ° C. The chocolate should not be exposed to temperatures above 21 ° C and/or humidity of more than 60%. The products must remain tightly closed.

CAN I CONSUME MY CHOCOLATE AFTER THE DATE INDICATED ON THE PACKAGE?

We guarantee that our products, stored in accordance with our recommendations, maintain optimal organoleptic properties (appearance, taste, texture) and change microbiologically only after the deadline for optimal use.

We cannot guarantee that the organoleptic properties of our products will continue beyond this period.

However, under the recommended storage conditions, there is no reason to fear microbiological degradation of products made only of chocolate, taking into account their physico-chemical properties.

WHAT IS WHITENING?

Cocoa butter can sometimes crystallize on the surface of the chocolate, creating white traces.

This may be due to storage conditions (too warm room temperature, thermal shock or a too humid environment ...).

WHY DO YOU HAVE TO TEMPER CHOCOLATE?

Tempering ensures the stabilization and homogenization of the cocoa butter crystals. It prevents the migration of these crystals to the edge of the chocolate, which would be the cause of white traces. It is therefore important to strictly adhere to the specified tempering curve in order to obtain a smooth and shiny chocolate without white traces.

The demoulding of shaped products is difficult, sometimes even impossible.

Tempering should follow the right cycle. Check the temperatures. The couverture used must be well adapted to the moulded part (good flowability). Make sure that the moulded parts do not cool down for too long.
